Moroccan Grilled Chicken with Chermoula

Ingredients

  • Chicken (you can use whichever cut or part you prefer)
  • For the Charmoula Marinade Recipe
  • 2 tbsp each of paprika, cumin, salt, finely chopped cilantro
  • 1 tbsp chopped garlic
  • â…› cup finely chopped onion
  • 1 tbsp each of turmeric, white pepper, hot paprika or chili powder
  • 1 tsp ras al hanout
  • ¼ cup olive oil
  • ½ to ¾ cup water
  • For the Yellow Rice (Saffron and Caramelized Onion Rice)
  • 1 ½ cups long grain rice
  • 3 cups water
  • 3-4 large shallots (roughly 1 ½ cups chopped)
  • 7-8 saffron threads
  • â…“ cups golden raisins
  • 2 table olive oil
  • Sliced, toasted almonds for garnish

Instructions

1. Prepare the charmoula:

2. Choose your chicken:

  • Any cut of chicken will work—breasts, thighs, drumstick, or  whole. Pick and use whichever you prefer! 

3. Marinate Overnight:

  • Coat the chicken generously with the charmoula mixture.
  • Place it in a sealed container or a zip-top bag.
  • Let it marinate in the refrigerator overnight.

4. Grill the chicken:

  • Preheat your grill to medium-high heat.
  • Grill the marinated chicken until cooked through and has a nice char on the outside.
  • Cooking time may vary depending on the cut of the chicken you choose, but generally, it may take about 15 to 20 minutes.

5. Serve and Enjoy:
